Kassler Rippchen are bone-in pork chops that have been cured in a salt brine and smoked, but not cooked. It’s a delicious and versatile cut of meat that can stand on its own next to cabbage dishes or fried potatoes, or can be added to soups and stews for additional flavor and heartiness.

**NOTE: We also have larger pieces of Kassler Rippchen available for baking. The weights range between 6-8 lbs. If you would like to order this item, just enter an order note during checkout for customer service to add #810 Kassler Rippchen to the order. This item will then be charged separately. Also, it will increase the shipping charge. Please call for current price per pound.**

Shipped: Frozen
Approx. Weight: 1 1/2 lb. package (4 chops)

Kassler Rippchen can be pan-fried, grilled, added to soups and stews, baked, or steamed (such as in sauerkraut). They go particularly well with cabbage dishes, such as sauerkraut or red cabbage, and fried potatoes. Be careful with seasoning; the meat is already salted from the salt brine, so additional salt is rarely needed.

Will keep up to 1 week after arrival if refrigerated in original vacuum-sealed packaging. Should packaging become loose—indicating an air leak—remove sausage immediately and wrap in paper towel.

You can freeze this item for up to 2 months without affecting flavor or quality. If frozen, defrost slowly in refrigerator; do not thaw at room temperature.
